From my kitchen, to your table

As far back as I can remember, I always had a passion for food and cooking. Taking ordinary ingredients and creating flavourful meals, inspired from my travels around the world. My obsession with cooking started as a young child. Instead of playing outdoors with my friends / toys, I would convince my younger brother to select random ingredients, and we would play Ready Steady Cook with him being my sous chef – "oh the mess we made!" As time went on I soon became a wife and mother elevating my passion for cooking and experimenting with different flavours. Having to cater to different taste buds and fussy eaters, meant I really had to learn the art of fusion cooking and step up my culinary skills. It was through this, I created, 'The Hot Mama' sauce.

'The Hot Mama' was born in the summer of 2016. It started with me just making a sauce for my friends and family for a BBQ we were hosting. I wanted something which tasted fresh and flavourful to enjoy with the array of different foods being served. The recipe has stayed the same since the first time i created it. This inspired me to share my passion with the world and set up my own business to launch 'The Hot Mama' Sauce, from my Kitchen, bringing it to your table.

As a sauce

Use it on your burgers, tacos, wraps, salads or add it to anything, you want to spice up. We love to add it to yogurt or hummous to create a creamy hot dip or topping.

As a marinade

Marinade meats, halloumi, prawns, tofo, paneer, or even vegetables and then cook them to infuse the flavours into your meal.

As a spread

'The Hot Mama' is great as a base on most sandwiches and even cheese toasties. Spread it all over your bread and add your cheese and toppings and voila you have taken the cheese toastie to a whole new level!

Senorita Tailor’s Vegan Bean Tostada

Authentic Mexican

Serves: 4-6

Cooks In: 10 MINUTES

Difficulty: Dead Easy!

Ingredients

For the tostadas:

corn oil or extra virgin olive oil
12 corn tortillas
salt

For the toppings:

3 1/2 cups refried beans, homemade or from 2 cans
1/2 head iceberg lettuce, sliced thin and seasoned with salt and vinegar (no oil)
2 medium tomatoes, chopped
1 to 2 avocados, sliced thin, or guacamole
50g vegan cheese or red leicester cheese
1 cup of salsa, or 1/2 cup sliced pickled jalapenos
A handful chopped fresh coriander
A generous drizzle of the Hot Mama

Method

Warm the refried beans in a saucepan on medium heat, until warm. If you are using regular canned beans, drain them, then add them to the pan with a little water, mash them as you heat them.
Keep the beans on warm while you prepare the tortillas, adding water to them as necessary to keep a creamy consistency.
To help the tortillas fry up better, dry them in the oven by laying them out on an oven rack and cooking them at 120c for 10 minutes or so.
Pour enough oil into a frying pan so that you have a quarter inch layer of oil. Heat the oil on medium high heat until sizzling hot, but not smoking.
One at a time, fry the tortillas in the oil. Repeat till they are all fried and crispy, should only take around 30sec per side.
Place the tortilla on a paper towel-lined plate, to absorb the excess oil. Sprinkle with a little salt.
Put the cooked tortillas on a rimmed baking sheet and place in a 120c again, to keep warm in the oven.
To serve, place toppings in separate bowls, with a larger serving dish for the beans. Bring out the tostada shells in batches, keeping those unused warm in the oven.
To prepare a tostada, spread a large spoonful of mashed refried beans over a tostada. Sprinkle on cheese and other toppings (sliced lettuce, avocados, salsa, etc.) and hot mama to top it off and then get stuck in!
